Aristocrat Coffee Roasters is a small artisanal roastery and cafe tucked into the old Civic Market building on South Washington — across from City Hall, next door to QuartHaus. We source green coffee from around the world, roast it ourselves on a vintage Probat drum, and serve it the way it was meant to be — with care, patience, and a plate of something sweet on the side.

Paul roasts every bag in-house on our Probat drum — one batch at a time, by hand, by ear. He's the one curating the vinyl behind the bar, walking you through the difference between a freddo cappuccino and a freddo espresso, and slipping you a sample of whatever just came out of the cooling tray.
When a young couple got caught in an Arizona dust storm during their wedding shoot, Paul threw open the doors, pulled them espressos, and let them finish their photos inside the shop. That's Aristocrat.
